What is the difference between a shielded and non shielded instrument cable?

In certain situations, confusing these two can be critical. I learned about the two types working for a security (alarm) company. When it comes to musical instruments, shielding is critical because it can affect sound (hum in particular) tremendously. Good thing for every musician to know!
